ASPARAGUS WITH TOASTED PINE NUTS

Asparagus with toasted pine nuts

Asparagus with toasted pine nuts Ingredients:

400g asparagus spears
3 tbl pine nuts
1/2 tsp. dried basil
1/4 cup olive oil
1/2 tsp. dried oregano
1 tbl. fresh lemon juice
Pepper
1 clove garlic crushed
1/2 tsp. salt

Asparagus with toasted pine nuts Method:

Snap off the ends of the asparagus. Remove the scales from asparagus stalks with a knife and place them in a steaming rack over boiling water, cover and steam 4-5 minutes or until spears are tender. Transfer to a serving platter.

Sauté pine nuts in a small frying pan over medium heat for 2 to 3 minutes, until browned then set aside.

Combine the olive oil and the remaining ingredients in a medium saucepan, stir with a wire whisk to blend. Cook over medium heat for 2 to 3 minutes or until thoroughly heated, stirring constantly. Pour over asparagus and sprinkle with pine nuts.

BACON STUFFED HAMBURGERS

Bacon Stuffed Hamburgers

Bacon Stuffed Hamburgers Ingredients:

4 bacon rashes
1/4 cup chopped onion
1 can mushroom pieces (finely chopped)
400g lean ground beef
400g pork sausage
1/4 cup grated Parmesan cheese
1/2 tsp pepper
1/4 tsp garlic powder
2 tbl steak sauce

Bacon Stuffed Hamburgers Method:

Cook the bacon rashes until crisp the remove the bacon and discard all of the dripping except for 2 tablespoons. Sauté the onion in drippings until tender. Cut the bacon into small pieces. Add the bacon and the mushrooms to skillet and set aside.

Combine the beef, pork, cheese, pepper, garlic powder and steak sauce in a large bowl and mix in well. Shape the mixture into 16 patties. Put the bacon mixture on top of eight of the patties then place the remaining patties on top of each one and press edges tightly to seal. Cook in a frying pan over medium heat turning every now and then until well cooked (pork sausage in burgers requires thorough cooking).
